Kingme's Redfish Grill Recipe

Kingme, one of our avid fans and readers, sent me his recipe for redfish cooked on a charcoal grill. It sounds so good that I may try at home tonight!
- Fillet, skin, and de-bone both sides of the redfish.
- Chop up some fresh shrimp and blue crab meat.
- Roll each fillet up with a mixture of shrimp, crab and Sorrento cheese and tie with baker’s string or hold with toothpicks.
- If the filet roll is too thick, you can cut it in half down the middle.
- Place on a charcoal grill on medium heat.
- Use non-stick spray to keep the rolls from sticking to the grill.
- Sprinkle with bacon bits as the rolls cook.
- “Serve with cheese grits and a cold drink.”
Kingme says he eats fish this way any time he is camped on the Intracoastal Waterway – and that is a lot judging by his catch reports and pictures in our Braggin’ Board Gallery!
