What are some of the features you look for in a Filet knife? I understand that keeping it sharp is always an issue, but are there other things that I should look for when buying one?
Is length of the blade as important as the flex, or thickness? How heavy should it be, and should it float?
Your advise will be appreciated.
I actually have two filet knives. One is heavier than the other. The first is a 7 inch Dexter filet, the second is a heavier 8 inch wide blade Dexter that I use for larger fish. I like the white composite handle instead of wood. The Dexter knives seem to be made with a little softer metal than other more expensive knives. I am hard on knives and these hold up well. They keep and edge through one or two fish and can be honed right back with a few strokes on a smooth stone or sharpening steel. Knives with harder steel may do a few more fish, but the edge takes longer to bring back. The softer metal lets me sharpen with less effort. I own several custom made 440 carbon steel knives. The Dexters are the ones I always end up going back to – and no, I do not get a kick back from Dexter.
